No, the edition cannot be changed. The secure bootloader of the BitBox02 forbids downgrades or edition changes of the firmware version, making it not possible to switch between the Multi and Bitcoin-only firmware. 

If you feel unsure about which edition to choose, maybe because you're still thinking about storing altcoins as well, it may be better to go for the Multi edition.

If you feel certain about only securing bitcoin with your BitBox02 and want no distractions, the Bitcoin-only edition is probably the right choice for you.
